Orange Marmalade Wings.
serves 2 to 4
2 1/2 lbs. wings, trimmed and separated
1/4 cup flour
1/2 cup dry bread crumbs
1 TB. PAPRIKA
1 TB. oregano
1/4 tsp. salt
1/2 tsp. freshly ground black pepper
1/4 cup oil for frying
2 large garlic cloves, finely chopped
1/2 cup orange marmalade
1/2 cup fresh orange juice
Combine flour, breadcrumbs, PAPRIKA, oregano, salt and pepper in a large bowl. Dip wings in flour mixture to coat evenly.
Heat oil in a large heavy frying pan. Add garlic and cook 2 minutes. Add wings and cook 5 minutes, or until browned on both sides.
Pour off oil.
In a small bowl, combine marmalade and orange juice and pour over wings. Bring to a boil on medium heat, reduce heat to simmer, and cook, stirring gently, until thickly glazed, about 10 minutes.
Transfer to a platter and serve.
