Penne w/ sundried tomato sauce & fresh basil
Makes 4-6 servings
Ingredients
500g penne
5 TB extra virgin olive oil
4 TB spicy sundried tomato paste*
5 TB chopped sundried tomatoes, packed in oil
1 cup diced fresh tomato (about 15 cherry tomatoes)
5-10 fresh basil leaves, plus more for garnish
4 tsp granulated sugar
100g grated pecorino
Salt
Freshly-ground black pepper
Directions
Prepare pasta according to package directions.
Meanwhile, set a skillet over medium-low heat and sauté the garlic and basil for 2-3 minutes. Add the tomato paste, sundried tomatoes, and sugar, and continue to cook another 2-3 minutes. Add fresh tomatoes and stir well.
Add about 2 tablespoons of the pasta water to the sauce and stir. Once the pasta is finished boiling, drain well, add to the skillet, and mix well to coat the pasta in the sauce.
Garnish with more fresh basil and the shredded cheese.
