Problem With Muffins... Is It the OverMixing Maybe?

I love cooking but I haven't done very much baking because my family doesn't eat baked goods fast enough before spoiling. Anyhow, I tried a new muffin recipe recently. The taste was delicious, but it wasn't as light and airy as I prefer muffins.

Am I remembering that batters like that should be hand mixed no matter what the recipe says? I know that you should only mix until everything is combined, so I am assuming that using an electric mixer for a batter such as muffin batter is not a good thing and tends to overmix. Is that accurate and I should only hand mix next time I make that recipe?
 
I would try only hand mix it as long as all your ingredients are blended together it should be perfect.

Thank you, Elizabeth. I tried them again yesterday with the light hand mixing... and although they turned out better than the first batch, it was still too dense for my liking. I'll just look for another recipe. :thumbsup:
