My recipe for samosas was questioned by Isla about addition to written recipes.
I told her I added stuff that worked.
I added yellow mustard seeds and garam masala. Everyone loves my samosas.

Find a recipe for Tzadziki. It is a Greek sauce and bread spread made primarily of cucumbers and yogurt. it is really very good.
Many of us have made tzatziki before. I make it to go with my lamb and beef gyro meat. Raita is very similar.

I see raita and tzatzika are already mentioned.
I like cucumber spears, as they are, or with some salt on it, esp as a side with nasi goreng.
Or atjar, a quick pickle. Half 5% white vinegar, half water. Bit of salt & sugar, optionally with some coriander seeds, peppercorn & cumin
And somewhere I got a crushed cucumber recipe. Gotta look for it though
