Ingredients (per cup): 250 ml freshly drawn or filtered water 2 cardamom pods, cracked 1 tsp soft light brown sugar 1 cm cinnamon stick 5 strands saffron 1 green tea bag A few flaked almonds to serve Extra sugar, if required, to taste Method: 1. Put the water, cardamoms, sugar, cinnamon and saffron in a saucepan, and bring to the boil. Boil for a couple of minutes, then reduce the heat and simmer for a further five. 2. Remove from the heat, and add the tea bag. Brew for a couple of minutes. The tea should be a light, golden colour. 3. Strain into a cup or glass, add the flaked almonds and a little extra sugar if required.
