This is great on a grilled steak, especially one that has been rubbed with a garlic, salt, cumin, paprika, olive oil mixture. The original idea came from one of the food mags, I can't remember which as it's been so long, but I've made some tweaks.
1 cup mayonnaise, purchased or homemade
1 tsp smoked paprika, hot or sweet, your choice
1/2 tsp freshly ground cumin
1/2 tsp freshly ground black pepper
Tiny pinch of salt
2 tablespoons meat juices from beef or more to taste
Mix everything together and add to steak as desired.
