We cant get good aged roasting beef here. But we do have plentiful supplier of local duck and the better Hungarian imports. My Lords, Ladies and Gentlemen. I give you Slow roast duck, duck fat roasties, sprouts and real GRAVY. I like to chop my sprouts and roasties before anointing them with the GRAVY. My wife also makes me wear a bib. I like a very cold glass of Guinness to help with sprout digestion and enhance flatulence.

I haven't tried duck (yet), but I have done the same thing with a whole chicken. It is very good.

Hang the duck in a dry airy cool place over night until it's dry. Then roast as normal.

Yes. My dad has the Weber rotisserie kit for his Genesis gas grill. I have used it, and it works well.

I have never tried it on a gasser, but I imagine it should work. When I do it with charcoal, I use a modified snake method for placing the charcoal.

I just used the indirect method without rotisserie.
