Tandoori chicken

Well now, that sounds good!. To make it properly you need a tandoor oven. It can be made without one of course and yes I do make it. How did you make yours?

Morning glory I soak chicken in water for 4 hrs then take it out and make slices and add a bit of salt and lemon juice, leave for 30 mins then add yoghurt and Garam masala and food colourings. I make my own Garam masala. Then I grill it til done. I also do lamb cutlets that way.

Why do you soak the chicken in water for 4 hours? I've never come across that as a technique unless you mean a brine.
