Recipe Welsh Rarebit

Ingredients

1 tblsp Butter
2 tsp Flour
2 tsp Worcestershire sauce
2 tsp English mustard powder
1 tsp Paprika
½ tsp Cayenne pepper (optional)
3 tblsp Beer
Salt and black pepper
250 gm Cheddar cheese, grated
4 Slices white or wholemeal bread
4 Eggs, either poached or fried

Method

Melt the butter in a saucepan over a very low heat and stir in the flour. Add the Worcestershire sauce and then the mustard powder, paprika and cayenne pepper. Then stir in the beer and seasoning. Mix well then stir in the cheese. When the cheese has melted remove from the heat.

Toast one side of the bread slices. Pour the cheese sauce over the other side and grill until golden brown.

Serve with an egg on each slice and throw on a little grass.

[I lived/worked in South Wales for one year in 1969/70 (Abergavenny) which was wonderful. I lived/worked in North Wales for 6 months 1973/74 (Holywell) which was akin to purgatory]
