What grains do you eat?

The tabbouleh recipe by @The Late Night Gourmet got me thinking about grains like bulgur, spelt, barley and so on. I probably don't use them as much as I should or could. I am going to make an effort to incorporate them more into meals. I was wondering how often others here cook with grains and what type.
 
We are using grains a lot more since son went vegan. I'm a fan of barley which is great added to soups but will also make a good 'risotto'. Quinoa is one of those 'wonder grains' allegedly (if you believe all that stuff). I use that too, mostly for salads similar to tabouleh. I've also used Freekeh in the same sort of way.
 
Quinoa, freekeh, bulgur, farro. We recently have been buying and trying grains. We use them mostly in salads for lunch boxes.
