Fried eggs and black truffle carpaccio

A simple dish as fried eggs but with a precious black truffle touch. This recipe is an interesting appetizer or also a second course.
Truffle is a delicacy that grows in different regions of Italy. Being so precious, they are also a bit expensive.. preserved minced truffle or truffle sauce or even truffle oil are very good alternatives to give a special flavour to your dishes such as pasta, risotto, salad, eggs or sandwiches.
