Borage, a plant with blue to purple flowers, also known as a starflower, is an annual in the flowering plant family Boraginaceae. It is native to the Mediterranean region, and has naturalized in many other locales. Its leaves, flowers and stalks are edible and taste a little like cucumber. Borage leaves are also good in salads & yoghurt. The plant is also commercially cultivated for borage seed oil (starflower oil) extracted from its seeds.

Vegetable use of borage is common in Germany (in Frankfurt in the speciality grüne Soße ("green sauce")), in the Spanish regions of Aragón and Navarre, on the Greek island of Crete, in the northern Italian region of Liguria (used as a filling of the traditional pasta ravioli and pansot) and in Poland and Russia (to flavour pickled gherkins).
