Recipe Almond Crusted Speckled Trout Fillet

I found a package of slivered almonds in the freezer. I used that for this recipe.
INGREDIENTS
4 Speckled Trout (Sea Trout) filet - pat dry (you can use Tilapia, Flounder, River Trout, Cod, any white, flaky fish)
For First Dredge
1/2 APF
1 TBSP dried dill
2 Tsp. Sea Salt
1 Tsp. Lemon Zest
1/2 Tsp. Ground Mustard
1/2 Tsp. Cayenne
Mix together in a shallow bowl
For Egg Wash
2 large eggs
2 TBSP water
For Almond Dredge
1 1/2 cup slivered almonds - chopped fine or coarsely ground (I used my spice grinder, grinding in batches)
Recipe - Tartar Sauce
Lemon Wedges
METHOD
Heat oven to 425 degrees F (218.33 C)
Line a sheet pan with parchment paper
Mix the ingredients for the Flour Dredge in a shallow bowl
Whisk eggs and water in a second bowl
Put Almonds in a third bowl
Dredge fish in the flour mixture, pat to remove excess, dip in the egg wash, let the wash drip off then press into the almonds - both sides.
Place on the baking sheet and bake for 10 minutes. Turn fish over and bake for another 5 to 7 minutes.
Serve with Homemade Recipe - Tartar Sauce, lemon wedges and a salad.
Dinner is served.
