I really didn't plan on making a recipe every single day in this challenge. And yet, here I am. This is a simple pesto, brightened up by the addition of peas.
Ingredients
4 ounces arugula
2 ounces olive oil
5 ounces peas
1 cup Padano cheese, grated
2 ounces sunflower seeds
Salt as needed
Directions
1. Pulse arugula, peas, and olive oil in food processor.
2. Add cheese and sunflower seeds, and blend until desired consistency is reached.
