PICK Pork Bologna Sausage 400g
ÂŁ4.19
PICK Pork Bologna Sausage - Delicious, traditional Hungarian bologna sausage made from high-quality pork.
I'll be working on a garlic version...I donât know about âauthentic,â but yes, I can buy chubs and rings. I usually buy rings, like this:
Troyer's Genuine Trail Bologna
I have some in my freezer right now.
I'll be working on a garlic version...![]()
Thank you! I don't think mine will be as "homogenized". More texture, chunks, visible fat and garlic.
I found a recipe going back to the 16th century so I'll call that "authentic". This is assuming, not having seen the original documents, the author isn't a sham. The Catholic Church would have the "real" recipe since that was the entity governing such things at the time.Authentic is a problematic term to use when it comes to food.
I understand that bologna is an US version of mortadella. The most interesting thing I learned about it is that it may contain myrtle seeds.
Thatâd be the trail bologna, then. Itâs much coarser. One of the delis I like also has both âGerman bolognaâ and âOld World German bologna,â and I believe I have both in my freezer, and theyâre varying degrees of coarseness.Thank you! I don't think mine will be as "homogenized". More texture, chunks, visible fat and garlic.Probably have lots of pepper too...

All the info I can find suggests it is of an American German origin. Bologna is an Italian city and the nearest sausage you will find to bologna there is mortadella on which bologna is based. Myrtle seeds seem to be a key ingredient...I found a recipe going back to the 16th century so I'll call that "authentic". Itâs interesting you ask that, because Wikipedia talks about that, and while they seem to be very much related, each culture that has a thing called polony may have changed it over time, so this polony here is not the same as that polony there, and neither are like bologna, which again gets back to the whole issue with âauthenticâ and why, IMO anyway, itâs a completely useless word that should be struck from the vocabularies of all languages around the world, at least as it relates to food.Is bologna the same as polony?

I like to think that way back under the Old Gods*, they were all sitting up there wherever they were, and one day Zeus said, âIâm feeling generousâŚletâs give the mortals this wonderful item and Iâll call it bologna.â
Isis said, âOh right, because it comes from that city in Italy, right?â
âYesâŚbut no, not really. Itâll be fun, trust me,â Zeus replied.
âGive me a moment,â Loki interjected, âIâll really get the party started!â
He waved his hands slightly, the horns of his helmet glowed, andâŚPOOF!âŚsuddenly there existed bologna in Germany, and in the New World (which had yet to be discovered, of course, but it was there nonetheless), and all over Europe and even into the British Isles.
âSo what? Youâve just put bologna all over the place, big deal. Youâre slipping with your japes, I think!â chortled Brigid, âGod of Mischief, indeed!â
âJust waitâŚ,â cautioned Loki.
Meanwhile, down on Earth:
âHail, good tavern keeper?! What have ye for a hungry and weary traveler upon which to sup?!â
âWhy, itâs your lucky day, good wanderer! Straight from the butcherâs just this mornâŚa fresh chub of bologna!â
<Proudly displays his delicacy>
âWhat ho?! Liar! Cheat! Why, thatâs too fine a grind to be bologna! Why everyone knows bologna comes in a coarse grind! Iâll have you before the Hospitality Guild for this deceit!â
âStay thy hand, ruffian! Let us consult with our newly-arrived Scotsman! Heâll back me up, surely! What say you, Ian?!â
âAch! That be polony as sure as the heather covers my beautiful homeland!â
âSee! I told you! WaitâŚdid you just say âpolony?!ââ
âCertainly! That there is polony!â
âBaloney! Thatâs bologna, I say!â
<The bell over the door rings as in walks a visitor from New Zealand>
âOi, did someone say polony?! I love those little cocktail weenies!â
<The tavern descends into murderous chaos. Meanwhile, back on Mount HeavenâŚ>
âYou were saying, Brigid?â smirked Loki.
âI yield to your supreme sense of jest. You are indeed the Wizard of Games!â
âJust wait until you see what I have planned for this thing theyâre calling pizza.â
âNo hints?â
âTwo wordsâŚham and pineapple.â
