Recipe Avgolemeno (Chicken Soup with Egg-Lemon Sauce)

This caught my attention recently, Avgolemeno Soup. It's basically a chicken soup with lemon and egg added to it to thicken and flavor it.

I've been tempted to give this a try sometime soon, since I regularly make my own chicken stock and chicken soup. I'm also a huge fan of the Egg Drop Soup you get at Chinese restaurants.

My only big concerns are how smooth the soup will come out, and if the lemon will cause the egg to curdle at all. From what I can see in the video and elsewhere, the soup looks like it is supposed to have a smooth consistency to it.
 
I don't think the lemon juice will cause the egg to curdle, although it's true that even egg by itself curdles when it's not properly heated. That's probably why there's all that stirring with a whisk and slowly adding hot soup instead of doing the Egg Drop method.

Thank you for posting this recipe, by the way! I enjoy minestrone soup especially with pasta, and this is like a more brothy lemon-chickeny Greek version with orzo.
