Avocados, bananas and plantains

Fried ripe plantains are called maduros by Cubans.

Double fried unripe plantains are called tostones.
My SIL is from Puerto Rico so I would guess it's the same/similar terminology...she just referred to them as fried plantains and I could see that they were ripe.
 
Pastelon. But I'm on for the mole as well 😁
Won't be making the pastelon again. Too much effort for the result as I noted either in recipe thread or this one. I like other dishes better that take a lot of work so they'll get made long before pastelon.
