Got a sweet tooth, join the party. Yes! I am talking about a halwa, and that too an unusual one, its beetroot halwa. Startled!! well one of the lesser-known recipes of chukandar/ beetroot. Bestowed with numerous nutrients, this halwa, besides being a gourmet delight, is packed with goodness. Sumptuous as it is, once tasted I bet your sweet tooth will crave for more.
Ingredients (Serve - 2 pax)
2 beetroots grated
1/4th cup residual khoya after making ghee
1/2 cup Malai/cream or 3-4 tablespoons of ghee
1/4th cup jaggery powder/sugar
Assorted chopped dry fruits you have at home as much as you wish
1/4th tsp green cardamom/elaichi powder
2) Stir well. You can cover and cook for 5 mins stirring in between.
3) After 5 minutes the beetroots and khoya softens.
4) Add jaggery powder/sugar and dry fruits and elaichi powder and keep stirring and cooking on medium flame till the water evaporates and the halwa is well roasted.
5) Since we keep it healthy by not adding too much ghee it will not leave ghee.
6) Ready to enjoy.
