Being from the South, I was raised eating boiled (green) peanuts. Dry peanuts can be boiled, but they are not as good. The secret is to boil the unshelled peanuts unsalted and add salt after the peanuts are cooked . They will absorb the salt as they cool. If you add the salt while boiling, they will never get done. Boiled green peanuts will be be soft (not the shells) and not chewy. There is a song from the war between the States about eating boiled peanuts, called goober peas. Goodness. how delicous!
