Bones. How much??!

I was looking up a recipe yesterday that requires a couple of kilos of pork bones to make a stock, so this morning went to my usual pork lady at the market and asked her how much; SGD $26 a kilo - so USD $20.

She said that when they get delivery of the pig they pay by weight and it's all together so fair enough but you would have thought a butcher would have loads of bones and offcuts from cutting up the carcass no? Or maybe they don't and it all would get sold as part of bone-in cuts?

Anyway that was more than I was willing to pay, so it's back to saving up bones from roasts and whatnot for a few months...

Same goes for beef bones. Want to make a nice roasted beef bone stock? You're paying almost as much for those as you are for a steak pound for pound...

I go to the butcher and ask for bones for my dogs. It's a mixture of pork and beef bones
They don't always have, but if they do it is less than a dollar per kg. There is hardly any meat on them, but thats fine.
Other butchers are higher in price, maybe up to 3-4 dollar/kg

A lot - even most - of what used to be cheap cuts or offcuts, as well as bones and offal, are a silly price these days. Take oxtail for eg . Don't really know what to put it down to. Cooking trends?

Yeah. Things that were not so desirable in the past people have now realised can be quite tasty, so up go the prices.

Fortunately I found an online stockist with 2kg of pork bones for about $4 so I'll be ordering those. Beef ones are about $5.
