And on the US side of the US-Canada border, at least in the northeast. The first time I ever heard of poutine was in my wife’s hometown in upstate NY, just over the border from Montreal, in the 1980’s.

I had haggis when I visited Edinburgh many years ago. I loved it.
But, the next morning, I felt incredibly sick. I figured it was because my stomach objected to having to digest another stomach.

I love poutine so much that I hate eating fries without gravy and some cheese, since I don't typically have cheese curds handy. But I always have a jar of gravy handy. My wife thinks I'm weird, which means...more poutine for me!
I'd love to try this variation, though I suspect my stomach will object.
