I found this recipe today on BBC Good Food and it looks delicious. It's all 5 of your 5 a day vegetable portions in one meal, and it's only around 300 calories. It's a little high in fat due mainly to the filo pastry, but I reckon it's okay once in a while.
I think it would go nicely with a jacket potato salad - what do you think?
