Carnitas Tacos for Dinner

So my fiance is really big on Mexican food and started buying pork that he cooks in the slow cooker all day. By the time it is done he adds some seasoning and shreds it. He then uses small corn tortillas that he fries lightly in oil and places the shredded pork on top. He tops it off with a blend of onion and cilantro and presents a phenomenal taco. I am not to fond of salsa but he claims they are even better with salsa. I absolutely love these tacos and could possibly eat them on a daily basis. Anyone else like different kinds of tacos other than ground beef? Any recipes anyone would like to share?

I too like shredded seasoned pork or even beef in tacos. Even seasoned chicken is a good deviation from the standard ground beef type taco meat.

We will just generally use whatever meat we have on hand that needs to be used up.

There's a good recipe here for Barbacoa tacos which is a favorite alongside carnitas which you mentioned!
