Cauliflower as a substitute for rice

Wait, really??? I really like stir fried cauliflower but have never heard of using it as a substitute for rice before. In my family, when we aren't in the mood for rice, we'd usually eat pasta or potatoes instead
 
You have to get the cauliflower to grate very fine to get it to be fluffy for rice. I have seen cauliflower used for more than just rice. You can make pizza crust or mashed potatoes. I think it is a great way to get kids to eat vegetables. I found recipes here that are quite tasty:

The pizza is particularly good and you would never guess it is cauliflower.
