I still struggle with that name
CHICKEN fried STEAK..
Seems contradictionary, but I believe it's like a chicken schnitzel...

It's a pounded beef patty schnitzel.

Edited to add: imagine my confusion when I moved to Ohio and ordered City Chicken only to discover it was pork.

I want you to sit down, pour yourself a stabilizing drink, and then I’ll tell you…we also have chicken fried chicken…which isn’t fried chicken…but it’s chicken that’s been fried…

I just fried up some pork cube steak in the beef tallow I made for the fat challenge. It was a bit chewy but given the flavor from the tallow I didn't care. 😋
You ever had Iowa pork sandwiches? Yummy! I use pork tenderloin slices and I butterfly it, pound it, bread it, and fry it. I treat it just like a fried chicken sandwich with pickles, mayo and mustard (and sometimes fresh green lettuce).
 
There was a diner place that made the most tender chicken fried steak I've ever had. It cut like room temperature butter with a fork. They soaked cube steak in buttermilk overnight, then dredged in well seasoned flour, and fried just long enough to cook through. Unfortunately, a greedy landlord priced them out of the location.
 
The last grocery purchase I posted…right next to the ground lamb is a package of two cube steaks. Guess what those are going to be used for? Hmmmm… 🤔
