Recipe Chicken Tortilla Soup

This is an absolute favorite in our household - as soon as the weather gets cold it's added to our meal plan and we've been enjoying it the last few weeks!

The recipe is from The Pioneer Woman - I just like her recipe best. If you have a rotisserie chicken instead of chicken breasts that's just fine to add that in instead!

You'll need:

  • 2 whole Boneless, Skinless Chicken Breasts
  • 1 Tablespoon Olive Oil
  • 1-1/2 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1 Tablespoon Olive Oil
  • 1 cup Diced Onion
  • 1/4 cup Diced Green Bell Pepper
  • 1/4 cup Red Bell Pepper
  • 3 cloves Garlic, Minced
  • 1 can (10 Oz. Can) Rotel Tomatoes And Green Chilies
  • 32 ounces chicken stock
  • 3 Tablespoons Tomato Paste
  • 4 cups Hot Water
  • 2 cans (15 Oz. Can) Black Beans, Drained
  • 3 Tablespoons Cornmeal Or Masa
  • 5 whole Corn Tortillas, Cut Into Uniform Strips Around 2 To 3 Inches


  • FOR THE GARNISHES:
  • Sour Cream
  • Diced Avocado
  • Diced Red Onion
  • Salsa Or Pico De Gallo
  • Grated Monterey Jack Cheese
  • Cilantro

Preheat oven to 375 degrees. Mix cumin, chili pepper, garlic powder, and salt. Drizzle 1 tablespoon olive oil on chicken breasts, then sprinkle a small amount of spice mix on both sides. Set aside the rest of the spice mix.

Place chicken breasts on a baking sheet. Bake for 20 to 25 minutes, or until chicken is done. Use two forks to shred chicken. Set aside.

Heat 1 tablespoon olive oil in a pot over medium high heat. Add onions, red pepper, green pepper, and minced garlic. Stir and begin cooking, then add the rest of the spice mix. Stir to combine, then add shredded chicken and stir.

Pour in Rotel, chicken stock, tomato paste, water, and black beans. Bring to a boil, then reduce heat to a simmer. Simmer for 45 minutes, uncovered.

Mix cornmeal with a small amount of water. Pour into the soup, then simmer for an additional 30 minutes. Check seasonings, adding more if needed---add more chili powder if it needs more spice, and be sure not to undersalt. Turn off heat and allow to sit for 15 to 20 minutes before serving. Five minutes before serving, gently stir in tortilla strips.

Ladle into bowls, then top with sour cream, diced red onion, diced avocado, pico de gallo, and grated cheese!
 
I love the Pioneer Woman and all the great recipes that she cooks up for her family. I don't watch it all the time but I catch it every now and then. I really like the sounds of this recipe. It is definitely something I would like to make up for one of the cold, stormy days that will soon be hitting us. It sounds like a great way to warm you up.I like how it has a lot of different spices so I know that it would taste great. I am excited to this. Thanks for sharing this on here. Great recipe. When I do make it I will be sure to post and let you know what I though of it. :)
 
Yes, I watch the Pioneer Woman every Saturday religiously. I love all soups, and Chicken Tortilla is one of my favorites. I think it is a great dish to enjoy when you are looking for something easy delicious with a kick. I had some when I was sampling around the Costco once, I thought I had died and gone to heaven. I bet the Pioneer Woman's variety is wonderful as well!

I hope you enjoy it! We are all about soups when the weather starts getting gloomy - not much better than warming up with a big hearty bowl of it!
 
I'm obsessed with The Pioneer Woman, I love her and watch her every Saturday as well! I love that all her recipes are very doable for the every day person and most don't take up much of your time. They're easy and delicious and so very much my type of cooking. This is definitely a recipe I'm going to try, thank you for posting it. We love soups but never really venture away from the usual chicken noodle or beef and barley type of soups.
 
We too are big soup fans around here. I love to make a big pot of some soup that really is striking my fancy at the time. I just learned a new chicken tortilla soup that is made in the crock pot. Not to take away from Pioneer woman, (Sorry no offense I don't watch her show) but this has quickly become our very favorite chicken tortilla soup. so so good.
