I will bone the leg out tomorrow and roll for ease of cutting xmas day.

I’ve been researching easy ways to do my Christmas wish list.
So here it is for duck legs.
I will make Duck Confit the easy way, I will make the honey, tamarind(impulse buy today) glaze to go with the legs.

Salt, pepper, herbs, put in fridge the day before. On Christmas day, pan fry the duck legs in butter, and quickly put in the oven to bake, the skin should be crispy, the sauce is to provide some umami flavors, maybe served with fennels, arugula salad.

Sounds tasty.
Confit duck or confit meat or fowl is a traditional French preservation method (the meaning of confit) rather than a dish (tho it can be, of course) and the legs are deep fried and crisped in duck fat and stored for up to a month or so in the fat until needed. Often used after that in various dishes. Very delicieux!

No wonder the duck confit recipe looks unusual complicated. Maybe mine is just pure roast duck. Simple and delicious!
 
I’m still researching which timbale recipe I want to do.
I have avocado, mango, shrimp timbale or

avocado, cucumber, tomato, smoked salmon timbale. I have 2 bunches of dill I want to use somehow.

Good to see tamarind in a recipe . It really is good.

In my family they eat well for Christmas but we put little emphasis on material stuff. We have something small for the kids to open though.

The week before Christmas, I will start making Christmas cookies.
Christmas dinner potential menu, some of this I do every year, this year I will add something newish, but they are mostly vegetable dishes, only desserts will be done the day ahead, but everything else is cooked on Christmas day.

1) French onion soup
2) Charcuterie board
3) Fresh salad with some of my favorite varieties
4) basil/tomato crostini, Roasted red peppers on crostini, oyster mushrooms/Stilton cheese on toast
5) Shrimps with cocktail sauce - OUT, replacing with Shrimp timbale
6) Scallops with angel hair pasta and fresh tomato/basil sauce - OUT, no scallops
7) Grilled quails on a bed of watercress
8) Roast Duck legs with honey glazed tamarin sauce
9) 2 roasted rack of lamb, we want some leftovers for the second day, will be served with Brussels Sprouts, and potato au gratin using new recipe I’ve found recently, very easy, steamed Brussels Sprouts, roasted fennels and pancetta, mashed parsnips.

Desserts
10) Pears stew in red wine, this year I will vary it a little bit
11) Pana cotta, recipe by Jamie Oliver
12) Christmas cake, British version my husband bought from an British/Indian grocery store
13) Christmas pudding with custard
14) Minced pies and ice cream

Well, my wife and I have finally settled on our xmas feast:

Cottage Pie (Home made)
Apple Pie for dessert (Store bought)

Then all the left over chocolate we couldn't get rid of any where else :)

There is only the two of us so we don't go to any great lengths like we used to when my wifes two boys were at home etc. Quick, simple, tasty and not many dishes to worry about to boot :)

My wife and I were saying how things feel different this year, that it doesn't feel like xmas at all. Anyone else have those thoughts or feelings?
