Christmas cookies for 2025

One batch is out, I’m waiting for this one to cool down so my husband and I can sample.
Honestly, it’s hard not to like cookies regardless of how it turns out. I may make another batch next week when I get more cranberries.

I’m taking a break, have another cookie, but this batch I was busy with other cookies and forgot to take them out to take it out and it’s crispy, just the way my husband likes them.

But I now abandon my plan to give my next door neighbor some cookies, my cookie cutter doesn’t work, what the heck, I’m not making perfect cookies, they are for my family only.
 
I feel the pressure is on when my daughter said my neighbor gave me a box chocolate truffles from Dubai,
There's a trendy (and seriously expensive) new chocolate bar on the market at the moment called Dubai Chocolate. It's basically a 70% chocolate bar packed full with pistachio cream.
 
The first batch for Linzer cookies are now done. I had to use bigger cutter and insert the hole by myself, goodness some don't look centered, but who cares, they will taste good because this recipe has an egg, I don’t recall the other recipe had an egg because it was much easier to manipulate.
With that said, I love making this cookie because it’s like I’m playing with play dough, what’s not to like. I’m being a kid again, haha.

Here it is the cookies are done, despite missing cutters and stuff, my daughter said the house smells wonderful.

Here is another recipe I found from my previous years, according to my private instagram, they are very good. So this is what I’m making today but I skipped the oatmeal, because it sounds like healthy food, not sinful enough, lol.

Photo of Mexican Wedding Cake from one year when I was making holiday cookies for my daughter, she was CEO of a small business and she threw a Christmas party for her friends and employees. After that year, she had enough money and catered food for her Christmas party, I didn’t have a chance to do any baking for her, oh well.

Today I’m back to baking some cranberry Hootycreek cookies, I need to find out where my white chocolate bits are.
 
I substitute one cup of oatmeal with one cup of walnut, I need to est walnuts more, good for the brain and I got a big bag, they also tend to go bad faster.
Anyway, the dough is done, I’m waiting for the oven to heat up, the rest of the dough will be in freezer for later use, no room anymore.
Will make other cookies another time, we are overloaded with cookies here.
 
Here is a picture of my Cranberry Hootycreek cookie, I used mini white chocolate chips because I was too lazy to get the big one. This white chocolate is gluten free and dairy free from Sprouts.
It’s soft and chewy inside, a bit crispy on the outside. A bit more sweet than I would have liked because I messed up on the math for the sugar, but much less sugary than cookies from Costco for reference.

My favoritest cookie ever was oatmeal, cranberry, white chocolate, and rice crispies.
 
My youngest kid likes all of my cookies, she’s been quietly consumed almost all of the Linzer cookies. My oldest child likes the first batch of soft cookies.
