Citrus Sweet Potato Butter

Recipe by Vivian Howard,
Deep Run Roots cookbook

1½ pounds roasted peeled sweet potatoes
Zest of ½ an orange (microplaned)
Zest of ½ a lime (microplaned)
Zest of ½ a lemon (microplaned)
½ cup of orange juice
¼ cup cup light brown sugar
⅓ butter, melted
1 teaspoon salt
2 dashes hot sauce

Puree all this together in the food processor until smooth. To heat add a little water to a sauce pan. Add the sweet potato puree to it. Stir constantly to avoid burning.

This is a great addition to any meat and bread. Great for Thanksgiving, a compliment for cranberry relish.
 
I can imagine that the citrus and hot sauce contrasts well with the sweetness of sweet potato. I know we have a discussion elsewhere about the traditional sweet accompaniments to savoury in American cuisine - but I think if I made it I'd leave out the sugar.
