Cold Soups

What cold soups do you know or eat? I'm after some new recipes and ideas, that are designed to be eaten cold.

Some regional soups one i know are Ajo Blanco is accidentally vegan. Obviously Gazpacho is another, with various version or variants.

Cucumber? There are various recipes and I can probably dig some out.

The obvious classic is Vichyssoise, a creamy chilled souped made from potato, leek and cream (use plant milk or silken tofu or another cream substitute for vegan).

Korean has some cold soup, I remember my husband said it tasted like water from a fish tank, lol.
This is what found, but maybe skip the meat.

I've served rasam (south Indian tomato digestive) as a soup on occasions. I'm pretty sure that's vegan.
There's another - it's a cold, green mango soup called amras. You can serve it warm as well.

not sure about the availability of green mangos here. there are plenty of ripes ones, which we can even buy frozen (easier, tastier and cheaper that way - mango soup is on the list of cold soups. I am rtying to get a list of cold soups going that we can rotate through.
