Coriander

I love coriander (cilantro, I think it's usually called in the United States). It's supposedly an easy to grow herb. True enough, I've never had any issues with it growing. It's just that it always seems to go from seedling straight to seed. It's as if there's only a few hours where the plant actually has the tasty leaves I want, and I always seem to miss them.

What am I doing wrong? Doe anyone have any top tips for growing coriander?
 
I tend to have more luck outside in summer than indoors. I grow shed loads outside and then pick it all and freeze it, as it is home grown it seems more intense flavour than shop bought and so although it does lose something int he freezing it is still miles better than shop bought!
