Recipe Cornbread salad

I know it sounds really crazy, it did to me too and I am a Southerner and we LOVE our cornbread, but in a salad?!? This is really, really good though...like stupid good!

Ingredients:
1 (7.5 ounce) package corn bread/muffin
mix
1 (4 ounce) can chopped green chilies
(not drained)
1/8 teaspoon ground cumin
1/8 teaspoon dried oregano
1 pinch rubbed sage
1 cup mayonnaise
1 cup sour cream
1 package dry Ranch-style dressing mix

10 slices bacon
2 (15.5 ounce) cans pinto beans, drained
and rinsed
1 (10 ounce) can whole kernel corn,
drained
3 medium tomatoes, chopped
1 cup chopped green pepper
1 cup chopped green onion
2 cups shredded Cheddar cheese


Directions:

Preheat the oven to 400 degrees. Prepare the cornbread mix according to package directions, stirring green chilies, cumin, oregano and sage into the finished batter. Spread into a greased 8 inch square pan.

Bake for 20 to 25 minutes in the preheated oven, or until the top springs back when lightly pressed. Set aside to cool completely.

In a small bowl, stir together the mayonnaise, sour cream, and Ranch dressing mix. Set aside. Wrap bacon in paper towels, and cook in the microwave until crisp, about 45 seconds per slice. Crumble, and set aside.

4.Crumble half of the cornbread into the bottom of a 9x13 inch baking dish. Pour half of the beans over the crumbled bread, half of the mayonnaise mixture, half of the corn, tomatoes, peppers, green onion, bacon and cheese. Repeat the layers ending with cheese on top. Cover and refrigerate for 2 hours before serving.
 
Cornbread salad does sound crazy. I wasn't born in the South, but my parents were.

It does sound interesting. I may give it a go.

This sounds absolutely delicious on its own. I think I will make this tomorrow night. My significant other is making his "famous" chili and this cornbread should compliment it nicely.
 
I have never heard of something like this before but it sounds really interesting. I've made panzanella salads before, which are more of an Italian type recipe, using stale bread, tomatoes, cucumbers, parmesan, herbs and red onions along with Italian dressing - but you have to eat it right away because it goes bad rather quickly. Any word on how well this holds up? Or do you need to make it right before you plan on serving it as well?
 
Cornbread salad - it's not so strange. Breads are often add extra texture to salads. Hence, the use of croutons. This recipe sounds like an out-side-the-box take on this combo.
