Cornbread

I like sweet corn bread.

I never understood how southern cooks put down Yankee's sweet corn bread when they serve their unsweet corn bread drenched in honey.

I do like my corn bread cut open with butter and sometimes creamed honey.

I'm southern but I'm not in that camp. Southern cornbread is as regionally different as shrimp and grits is. Or as different as BBQ between various states. Here in NE the cornbread is bland and not sweet. Yuck.

The Cornbread that I make is a touch sweet but not too much so. (my mother never made it, I had to learn on my own)
In Hawaii, surprisingly enough, it is a thing.
Split open, on to a well buttered flat-top and griddled to a crispy perfection and then add even more Butter to the still warm top and a goodly glop of Honey. ONO (that's Hawaiian for delicious)!!!
Zippy's (an extremely popular diner-style family restaurant in Hawaii and now Las Vegas) even sells their Cornbread mix!!!
