From what I understand, or read, at least, there were loads of pigs in Ireland , and pork was the favourite meat. I can only imagine they didn't "corn" it because fresh pork was always available.anyone heard of 'corned pork' stuff?
seems 'salt pork' is the more common label - 'corned pork' comes up in old recipes ala Swedish corned pork roast.
