A delicious and nutritious way to eat Aubergines is to cut them into slivers and fry them in a little Olive Oil, a dash of garlic (fresh) and season with salt and Oreganum.
Once you have fried it until it is golden brown then you can either throw it into a salad (tastes amazing) or you can eat them just like that.
