Crispy Fried Aubergines

A delicious and nutritious way to eat Aubergines is to cut them into slivers and fry them in a little Olive Oil, a dash of garlic (fresh) and season with salt and Oreganum.
Once you have fried it until it is golden brown then you can either throw it into a salad (tastes amazing) or you can eat them just like that.
 
I usually cook slices of aubergine with onions, garlic, tomato etc, so I shall have to try frying aubergine slices on their own. I always cut them into fine slices and fry in oil but I've never let them get crispy.

I have noticed that aubergine slices seem to absorb a lot of oil during frying.
 
I have to confess I only ever fry aubergines to cook them (at least initially fry them - they do sometimes then get added to other things), but I don't worry about how much oil they absorb because I have so little oil in my diet and oil is not bad for you (excess is bad for you, as with all things).
