Ingredients:
1 kg (2.2 lbs) cucumber
500 gms (1.1 lbs) sugar
125 gms (4½ oz) red pepper
300 gms (11 oz) onion
250 mls (½ pint) white vinegar
3 tsps yellow mustard seeds
Tiny pinch of cloves
Pinch turmeric powder
½ tsp cayenne powder
50 gms (2 oz) salt
Makes 5 200 cc jars ( or 2 mayo jars!)
Method:

Method:
- Cut the cucumbers into 4, lengthwise quarters and remove the seeds, Dice into ¼ inch pieces and place in a bowl. Sprinkle with 45 gms of salt, cover, and leave overnight.
- The following day, drain the cucumber, wash briefly to remove much of the salt, and drain in a colander.
- While the cucumbers are draining, finely dice the red peppers and the onion.
- In a large pot, add all the veg, the sugar, the spices, the vinegar and the remaining salt. Bring to a boil and then lower to medium. Simmer for about 30 minutes, until the liquid has reduced and the chutney/relish has thickened.
- Bottle/can immediately. No need to put this in the fridge unless opened; and even then, I don't put it in the fridge. Will last for at least 18 months.
