Raita is Tzatzika's Indian cousin. Its fantastically cooling with a hot spicy curry but great anytime as a dip. This is the way I make it.

1/2 cucumber
150g Greek style yoghurt
1 tsp ground cumin
1 tsp ground coriander
Salt, to taste
Ground turmeric, paprika and a few whole cumin seeds, to sprinkle

Method
- Grate or julienne the cucumber (I used a julienne grater). Squeeze tightly in your hand to remove as much liquid as possible from the cucumber. Set aside some of the cucumber to decorate.
- Mix the ground cumin and coriander into the yoghurt. Add salt, to taste and then mix in the cucumber.
- Garnish with the ground turmeric, paprika, cumin seeds and the rest of the cucumber.
