Ditto on the skin. I eat most skins on most veggies! Our cucumbers are more like Barriehie 's. Thicker and shorter, with plenty of seeds inside. When I prepare them, I cut them into 4, lengthwise, and remove the seeds. They go to the tortoise. I'm not a fan of removing the skin - vitamins C and K get dumped.

Me too! I love skin on potatoes as well, though my DH and the kids do not. Growing up my Dad used to salt and bake potatoes in the oven and the skins were the best part!Ditto on the skin. I eat most skins on most veggies!
Sidenote on eating the skins. Soaking in baking soda solution for 10 minutes does a lot for washing off the agri chemicals...Me too! I love skin on potatoes as well, though my DH and the kids do not. Growing up my Dad used to salt and bake potatoes in the oven and the skins were the best part!
My family always peeled cucumber unless they were fresh grown. Like I posted above, that wax on the skin from those at the grocery store is awful. But we didn't have the English variety back then as far as I know, and if we did, they weren't in cryovac packaging. They are slightly more expensive and that doesn't matter to me now, but I am sure my frugal mother wasn't buying them if they were available.
It might make them cleaner but it still doesn't take away the thicker, chewy, and sometimes bitter skins. I know you like them and that's cool. If you grow some seedless burpless ones next year, let me know!Sidenote on eating the skins. Soaking in baking soda solution for 10 minutes does a lot for washing off the agri chemicals...
