I also like to combine sometimes scallops with lard or guanciale, very nice. Not tried with the addition of cheese but I think that Burrata might works

I have pan seared scallops in bacon grease.

By the way, anyone who says seafood and cheese should never be mixed hasn't has a really good lobster Mac-n-cheese. :hungry:

I suppose the Netherlands and Belgium break the universal rules where it comes to how to eat French fries/or chips.

We dip them in mayo! And even worse, in NL, satay sauce! Or mother of all horrors, a mixture of mayo and satay sauce! (frietje oorlog)

Canada has poutine. Cheese curds and gravy over fries. :hyper: add in braised short rib and life is good.
