I promised @morning glory this recipe months ago. My version is not at all authentic. For that, look here:

  • I tbsp olive oil
  • 300g smoked haddock (trimmed and cut into chunks - keep the trimmings)
  • 1 bay leaf
  • 2 leeks (sliced)
  • 1 small cauliflower (cut into large chunks*)
  • 1 potato (peeled and cut into chunks)
  • 200ml almond milk*
* I did warn you this was not an authentic recipe! I add whatever veg I have

Sauté leek until beginning to soften
Add chunks of potato and stir for a couple of minutes.
Add milk, black pepper, bay leaf and the fish trimmings (the trimmings break down and add more flavour to the milk without all the fish being overcooked).
Simmer for ten minutes.
Add cauliflower.
Simmer for ten minutes.
Add fish on top and simmer for another ten minutes.

Oh gosh! Thank you for remembering. It could be a Christmas Eve dish for me. Sounds good as no cream (I prefer less rich alternatives). I will definitely make this.
