I promised @morning glory this recipe months ago. My version is not at all authentic. For that, look here:

Sauté leek until beginning to soften
Add chunks of potato and stir for a couple of minutes.
Add milk, black pepper, bay leaf and the fish trimmings (the trimmings break down and add more flavour to the milk without all the fish being overcooked).
Simmer for ten minutes.
Add cauliflower.
Simmer for ten minutes.
Add fish on top and simmer for another ten minutes.
I took a photo but think it is on my husbands phone so will have to upload that later when he is home.

- I tbsp olive oil
- 300g smoked haddock (trimmed and cut into chunks - keep the trimmings)
- 1 bay leaf
- 2 leeks (sliced)
- 1 small cauliflower (cut into large chunks*)
- 1 potato (peeled and cut into chunks)
- 200ml almond milk*
