Different ways with pancakes

Okay, tomorrow is Shrove Tuesday, so all across the land - and here in Spain - pancakes will be the order of the day. I found this great blog post on the BBC Good Food website, and it has all sorts of pancake recipes, from special diets to just that bit different.

I like the look of the Mediterranean pancakes, with spring onions, chilli, coriander and tzatziki dip. Anything there that takes your fancy, or do you have a favourite recipe to share?

I like to keep it simple. A fairly standard mix for the batter and something sweet like chocolate, golden syrup or maple syrup on top.

standard batter made with soya milk and served with lemons and sugar.
but I do sometimes switch out some of the flour with hemp flour for a tastier recipe.

The only thing i can remember adding to my pancakes is blueberry and it's not often that i do this only when the kids make a request...i think i prefer my plain regular pancakes.
