I am just reading about this way of serving eggs that I hadn't seen, though it's not exactly off-the-wall. Hollandaise sauce - which I love - is similar, so this intrigued me. Mayo is seasoned and enjoyed on the eggs as you see in the picture above.

But, that's not the whole story. In addition to this being a favorite way of serving eggs in France, this combo is actually protected by, basically, an Association for the Protection of the Egg Mayonnaise:

I don't know how influential this organization is, but it's pretty cool that it exists.
 
I'm a little surprised you never came across this. Eggs Mayonnaise is a traditional way to serve eggs as Windigo says and I (used to) see it on menus in the UK. Not now though. I think if anything its rather 'retro' as I knew it back in the 70's.

I'm not sure what special ingredients in the mayonnaise are protected, though...
