So, I own this:

My guy tells me I am eternally wasting money on unnecessary gadgets. Though I beg to differ I might be starting to agree with him on this item. I made a batch of vinaigrette with both my emulsifier & a mason jar. After letting them both rest & coming back to them they really were not much different in taste or texture. However, with the emulsifier in the first five minutes it seemed the ingredients were much better blended & aerated.

So, does anyone else use one of these & have you noticed much of a difference?

Exactly! Except mine is not one that you shake but there is a spiral pulley that is supposed to 'emulsify' better than shaking it in a mason jar. :o_o:
I've found that with mine if you end up using the dressing sooner than later there is something to their suggestion. So, perhaps if you were to use it as a serving tool it would be a better option. But, quite honestly, if you let it stand longer than ten minutes there is little to no difference.
