Due to my failed experiences with homemade coconut yogurt I had coconut yogurt that was too runny. I'm growing tired of eating curry and needed to figure out what to do with it. I also a leftover open lemon from another recipe, and leftover shredded coconut from the coconut milk I made. So I thought, why not turn this leftover fruits into a popsicle?

In the end this is a yummy, easy dessert that you can easily adapt to your liking.

- 300ml coconut milk
- Juice of 1 lemon
- 2 tablespoons fructose
- 2 tablespoons shredded coconut

1. Start by mixing coconut milk, lemon juice, 1 tablespoon fructose and 1 tablespoon shredded coconut with a stick mixer. Taste and add more fructose and more shredded coconut, mix again. You can add more fructose, or more shredded coconut, or other ingredients to your liking, just keep tasting and mixing and adding ingredients.

2. Get the mix into molds and put them in the freezer for at least 6 hours.
