My hubby made me this sandwich sometime i ago and i fell in love it with it from i took my first bite. I make this sandwich by firstly seasoning my egg with sprigs of thyme/rosemary,grated garlic/onion,escallion,cayenne pepper and salt to taste(optional). Both sides of bread are then coated with egg before placed in a hot skillet greased with oil...fried to desired crispness. After using paper towels to absorb any extra grease i usually sandwich with tomato and cucumber slices,red onion rings and sardines. I am telling you this is so divine and filling...i am never tired of having this.

Not sure about the sardines [each to his own] but that sounds good to me too. I'll have to try that.
Well your eggy bread is done to your suit just about anything can be used in your sandwich; bacon,sausages,bologna,vegetables...it's all about your likes....it's just that sardines happen to be one of my favorite canned food.
