Recipe & Video Fijian Cassava Cake

Ingredients

900gm packet minced frozen cassava (defrosted)
3/4 cup dessicated coconut
1/4 cup sugar
1 395gm tin sweetened condensed milk

Method

Combine cassava, coconut, sugar in a bowl. Mix in half the tin of milk, reserving the other half. Spread mix in to a cake tin greased with butter and bake at 180 degree celsius for 3/4 hour. Remove cake from oven and spread remainder of condensed milk evenly over the top of cake. Bake for further 15-20 mins. Remove, and allow to cool a bit before slicing. Forms more like a dense slice then a light cake. Can be served cold, in fact usually is.

This looks very good indeed. I wondered if we would get some cake recipes for the challenge.
If I were competing and not judging, a coconut cake would be my first thought.

Coconut cake is very, very popular here. Light white cake with a little flakes coconut in it, as well as coconut extract, and a coconut-flavored buttercream frosting, with toasted coconut flakes sprinkled over...YUM!
