If I can get uncut buns, sometimes this is the result.

Par fry onions. Then REALLY fry some fresh mushrooms, I mean until they smell. Set aside.

Slice tenderloin as thin as possible, I use a slicer.

V cut the buns on top and squish them out some. Put on some mayo, then some sliced cheese, then hot meat which should melt the cheese. Then the onions and mushrooms.

Other things fit in there. Chicken, peppers and onions for one. Two hot dogs would fit but if you want that cut them up and put in chili and onions, whatever. Cheese is very optional.

Roast meat and mashed potatoes with gravy on top.

Shrimp, lettuce (etc.) and Caesar dressing.

Many things can go in there. I know I am stepping on the name, a Po boy is an Italian (I think) sausage, some have cheese in them. But screwem. I am not the first to step on the name.

A po-boy is a cajun sandwich, not Italian. A cajun po-boy can have anything from roast beef, to cold cuts, to fried chicken or seafood in it. Typical toppings include shredded lettuce and an aioli.

Northeast US versions would be hoagies (NJ), subs (NY), or grinders (MA).

Your first sandwich is basically a Philly Cheesesteak, although the steak in a Philly is usually thin sliced ribeye -- no mayo, just cheese and sautéed onions.
