Fish sauce and its uses

I have them too, I’m still searching for the good bottle.

I buy Squid brand, made in Thailand. No added sugar or MSG. Edit: only 3% sugar added.

Red boat is very expensive. I think its rather like having an expensive extra virgin olive oil. Here is the low down:

Founded in 2006 by Vietnamese-American Cuong Pham, Red Boat strives to produce the purest fish sauce available on the market. Every bottle is made on the island of Phu Quoc using wild-caught black anchovies (ca com). The fishes are salted within minutes of leaving the ocean water, then aged for more than a year in wooden barrels to achieve the smoothest, richest, and sweetest flavor. Red Boat bottles the first press “extra virgin” fish sauce, so the only ingredients are anchovies and sea salt.

You can order some online. Redboat has it online but minimum $50 to get free shipment.
Don't order online, I got done with shipping costs, or inflated carts to get free shipping, a couple of years ago. I make a once a year run to a favorite Asian store and fix my list. It's a chance to get out of Hooterville for 1/2 a day... 😃
 
Thats the one I have. Don't know if it's good/not good - my Asian ingredient care package friend picked it up with some other bits. 😺

Its fine. In my opinion, its not really worth getting too precious about fish sauce. Only a little splash is used in recipes. Its a flavour enhancer not a main ingredient.

Having said that, I read that Red Boat is good in salad dressings. Again, only a tiny amount. But perhaps a superior sauce might make a difference there.
 
When I recollect on the myriad of choices in some of the Las Vegas Asian stores I've determined that as long as it smells like fish sauce, looks like fish sauce, and perhaps has some "stuff" settled in the bottom I'm good. 😃

I, at this point, have a means of reliably getting the brand I like so there's no more guessing. If I had an off brand I'd put it in my brands bottle... 🤣
